Ingredients
- 4 boneless, skinless chicken breasts (6–8 oz each)
- 8 slices regular-cut bacon, partially pre-cooked
- 8 oz cream cheese, softened (full-fat recommended)
- 1 cup shredded Monterey Jack and cheddar cheese blend
- 2–3 fresh jalapeños, finely diced (seeds removed for less heat)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and freshly ground black pepper to taste
- Toothpicks (optional, for securing)
Instructions
- 1. Prepare Chicken: Pound chicken breasts to an even 1/2-inch thickness. Season with salt and pepper.
- 2. Make Filling: In a bowl, combine softened cream cheese, shredded cheese blend, diced jalapeños, garlic powder, onion powder, salt, and pepper. Mix well.
- 3. Stuff & Wrap: Spoon 2-3 tbsp of filling onto one end of each chicken breast. Roll tightly, tucking in sides. Wrap each roll with 2 slices of partially pre-cooked bacon, securing with toothpicks if needed.
- 4. Bake: Preheat oven to 400°F (200°C). Place chicken seam-side down on a parchment-lined baking sheet. Bake for 20-25 minutes, or until internal temperature reaches 165°F (74°C).
- 5. Broil for Crispiness: Broil for 2-4 minutes, watching carefully, until bacon is golden and crispy. Remove toothpicks before serving.
