Baked Broccoli and Cheese Balls

  • Total Time: 45 minutes
  • Yield: 24-30 balls (approx. 6-8 servings)

Description

These delightful baked broccoli and cheese balls feature a crispy golden exterior and a creamy, cheesy interior. Perfect as an appetizer, side dish, or a fun, veggie-packed snack for the whole family.

Ingredients

  • 2 cups (about 1 medium head) fresh broccoli florets, steamed and finely chopped
  • 1 ½ cups shredded sharp cheddar cheese
  • 2 large eggs, lightly beaten
  • ¼ cup all-purpose flour
  • ½ cup Panko breadcrumbs, plus more for coating (optional)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray or olive oil for baking sheet

Instructions

  • 1. Prepare Broccoli: Steam broccoli florets until tender-crisp. Drain very well and let cool. Finely chop the cooled broccoli, then squeeze out as much excess moisture as possible using paper towels or a clean kitchen towel.
  • 2. Combine Ingredients: In a large bowl, combine the finely chopped broccoli, shredded cheddar cheese, beaten eggs, flour, Panko breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.
  • 3. Form Balls: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with cooking spray. Using a small cookie scoop or your hands, form the mixture into 1 to 1.5-inch balls.
  • 4. Bake: Arrange the balls on the prepared baking sheet, ensuring they are not crowded. Bake for 20-25 minutes, or until golden brown and crispy on the outside. Serve warm with your favorite dipping sauce.
