Ingredients
- 2 cups (about 1 medium head) fresh broccoli florets, steamed and finely chopped
- 1 ½ cups shredded sharp cheddar cheese
- 2 large eggs, lightly beaten
- ¼ cup all-purpose flour
- ½ cup Panko breadcrumbs, plus more for coating (optional)
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Cooking spray or olive oil for baking sheet
Instructions
- 1. Prepare Broccoli: Steam broccoli florets until tender-crisp. Drain very well and let cool. Finely chop the cooled broccoli, then squeeze out as much excess moisture as possible using paper towels or a clean kitchen towel.
- 2. Combine Ingredients: In a large bowl, combine the finely chopped broccoli, shredded cheddar cheese, beaten eggs, flour, Panko breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.
- 3. Form Balls: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with cooking spray. Using a small cookie scoop or your hands, form the mixture into 1 to 1.5-inch balls.
