Ingredients

  • 1 (13-15 oz) bag sturdy tortilla chips
  • 1 lb ground beef or shredded chicken, cooked and seasoned (or 2 cans black beans, rinsed and drained, for vegetarian)
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp Cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup sliced pickled jalapeños (or fresh, if preferred)
  • 1/2 cup diced tomatoes
  • Optional: 1/4 cup chopped fresh cilantro, for garnish
  • Optional: Sour cream, guacamole, salsa, for serving

Instructions

  • Preheat oven to 375°F (190°C). Generously spray a 10-12 cup Bundt pan with non-stick cooking spray.
  • Arrange a single layer of tortilla chips in the bottom of the Bundt pan, breaking some to fit.
  • Sprinkle with a layer of mixed cheeses, then some cooked protein (or beans), red onion, jalapeños, and tomatoes.
  • Repeat the layering process, gently pressing down each layer, until the pan is full, ending with a generous layer of cheese on top.
  • Place the Bundt pan on a baking sheet and bake for 15-20 minutes, or until cheese is bubbly and melted, and chips are golden.
  • Remove from oven and let cool for 2-3 minutes. Place a large serving platter over the Bundt pan and carefully invert.
