Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1/4 cup honey
- 1/4 cup hoisin sauce
- 2 tbsp soy sauce
- 2 tbsp Shaoxing wine (or dry sherry)
- 1 tsp Chinese five-spice powder
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1/2 tsp red food coloring (optional)
Instructions
- Prepare Chicken: Trim chicken thighs and slice thicker pieces in half lengthwise to about 1/2-3/4 inch thickness for even cooking.
- Make Marinade: In a bowl, whisk together honey, hoisin sauce, soy sauce, Shaoxing wine, five-spice powder, minced garlic, grated ginger, and red food coloring (if using).
- Marinate Chicken: Add chicken to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours, or ideally overnight (12-24 hours).
- Bake Chicken: Preheat oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top. Arrange chicken on the rack, reserving marinade. Bake for 20-25 minutes, flipping halfway.
- Baste & Broil: Brush chicken generously with reserved marinade. Increase oven to broil (high). Broil for 2-4 minutes per side, watching closely, until caramelized and cooked through (165°F/74°C internal temp). Repeat basting and broiling if desired for extra glaze.
- Rest & Serve: Remove from oven and let rest for 5-10 minutes before slicing against the grain. Serve hot with rice and vegetables.
