Ingredients
- 2 slices sturdy bread (ciabatta, sourdough, or artisan white)
- 1/4 cup cooked chicken, shredded or diced
- 2–3 tablespoons basil pesto (store-bought or homemade)
- 1–2 slices provolone, mozzarella, or cheese of choice
- Optional: Sliced tomato, lettuce, fresh spinach, roasted red peppers
- Optional: Olive oil or butter for grilling/pressing
Instructions
- Prepare Ingredients: Gather all your ingredients. If using cold chicken, gently warm it if desired. Slice any vegetables and cheese.
- Toast Bread: Lightly toast your bread slices in a toaster, under a broiler, or in a dry pan until golden and slightly crisp.
- Spread Pesto: Spread a generous layer of pesto on one side of each toasted bread slice.
- Layer Fillings: On one slice of bread, layer the cooked chicken. Place the cheese on top of the chicken. Add any desired vegetables like tomato, lettuce, or roasted red peppers.
- Assemble and Serve: Place the second slice of bread, pesto-side down, on top of the fillings. Gently press down. If desired, grill in a panini press or skillet until golden and cheese is melted. Slice in half and serve immediately.
