Ingredients
- 2 cups cooked, shredded chicken breast
- 1/2 cup mayonnaise (or Greek yogurt/avocado mayo)
- 1/4 cup finely diced celery
- 2 tablespoons finely diced red onion
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- Salt and freshly ground black pepper, to taste
- 2–3 large English cucumbers
- Optional: 1/4 cup toasted slivered almonds or sunflower seeds for crunch
Instructions
- Prepare the Chicken: Ensure chicken is cooked and cooled. Shred into fine pieces.
- Make the Chicken Salad: In a bowl, combine shredded chicken, mayonnaise, celery, red onion, dill, parsley, and lemon juice. Season with salt and pepper. Mix well.
- Chill Chicken Salad: Cover and refrigerate the chicken salad for at least 30 minutes to allow flavors to meld.
- Slice Cucumbers: Wash and dry cucumbers. Using a mandoline or sharp peeler, slice lengthwise into thin, even ribbons (approx. 1/16 to 1/8 inch thick). Pat dry with paper towels.
- Assemble Roll Ups: Lay a cucumber strip flat. Place 1-2 tablespoons of chicken salad near one end. Carefully roll the cucumber strip tightly around the filling.
- Serve: Arrange roll ups seam-side down on a platter. Chill for another 15 minutes before serving for best results.
