Ingredients
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1/4 cup mayonnaise or vegan alternative
- 1 stalk celery, finely diced
- 2 tablespoons red onion, finely minced
- 1 tablespoon fresh dill, chopped
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- Salt and freshly ground black pepper, to taste
- 4 slices of your favorite bread
- Optional toppings: lettuce, tomato slices, sprouts
Instructions
- Prep Chickpeas: In a medium bowl, mash about two-thirds of the rinsed and drained chickpeas with a fork or potato masher, leaving the rest whole. Season with a pinch of salt and pepper.
- Combine Ingredients: Add the mayonnaise (or vegan alternative), diced celery, minced red onion, chopped fresh dill, Dijon mustard, and lemon juice to the bowl with the chickpeas.
- Mix and Season: Mix all ingredients until well combined. Taste the chickpea salad and adjust seasonings (salt, pepper, lemon, mustard) as needed to your preference.
- Assemble Sandwich: Spread a generous amount of chickpea salad onto two slices of bread. Add optional toppings like lettuce and tomato, then top with the remaining bread slices. Serve immediately.
