  • 34 cloves garlic, minced
  • 1/4 red onion or 1 large shallot, finely minced
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon salt, plus more for beef
  • 1/4 teaspoon black pepper, plus more for beef
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Cooked rice, quinoa, or roasted vegetables, for serving

Instructions

  • Prep the Chimichurri: In a medium bowl, combine minced parsley, cilantro, garlic, red onion/shallot, red wine vinegar, olive oil, salt, pepper, and red pepper flakes (if using). Stir well and let sit for at least 10-15 minutes to allow flavors to meld.
