Ingredients
- 1 lb (450g) ground beef (80/20 or 85/15 recommended)
- 1/2 cup fresh parsley, finely minced
- 1/4 cup fresh cilantro, finely minced
- 3–4 cloves garlic, minced
- 1/4 red onion or 1 large shallot, finely minced
- 1/4 cup red wine vinegar
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon salt, plus more for beef
- 1/4 teaspoon black pepper, plus more for beef
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Cooked rice, quinoa, or roasted vegetables, for serving
Instructions
- Prep the Chimichurri: In a medium bowl, combine minced parsley, cilantro, garlic, red onion/shallot, red wine vinegar, olive oil, salt, pepper, and red pepper flakes (if using). Stir well and let sit for at least 10-15 minutes to allow flavors to meld.
- Brown the Ground Beef: Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a spoon. Season generously with salt and pepper. Cook until fully browned and no pink remains, about 7-10 minutes. Drain any excess fat.
- Combine and Simmer: Reduce heat to low. Add about half to two-thirds of the prepared chimichurri sauce to the browned ground beef in the skillet. Stir to coat evenly and simmer gently for 2-3 minutes, allowing flavors to meld.
- Assemble Your Bowls: Divide your chosen base (rice, quinoa, etc.) among serving bowls. Spoon a generous portion of the chimichurri ground beef over the base. Drizzle the remaining fresh chimichurri sauce over the top of each bowl. Serve immediately.
