Description

Ingredients

  • 1.5 lbs ground beef (or turkey/sausage)
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1/2 cup milk (or beef/vegetable broth)
  • 1 (10 oz) package frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 (32 oz) bag frozen tater tots
  • 2 cups shredded cheddar cheese (or Colby Jack)

Instructions

  • 1. Prep & Brown Beef: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish. In a large skillet, brown ground beef over medium-high heat, breaking it apart. Drain excess fat.
  • 2. Combine Filling: Return beef to skillet. Stir in cream of mushroom soup, milk, frozen mixed vegetables, salt, and pepper until well combined.
  • 3. Assemble Casserole: Spread the meat mixture evenly into the prepared baking dish. Arrange frozen tater tots in a single layer over the meat mixture.
  • 4. Bake: Bake for 30-35 minutes, or until tater tots are golden brown and crispy, and the filling is bubbly.
  • 5. Add Cheese & Finish: Remove from oven, sprinkle with shredded cheese. Return to oven for 5-10 minutes, or until cheese is melted and bubbly.
  • 6. Rest & Serve: Let stand for 5-10 minutes before serving to allow the casserole to set.
