Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup full-fat cottage cheese, blended smooth
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups chocolate chips (semi-sweet or a mix)

Instructions

  • 1. Prepare: Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper. Blend cottage cheese until completely smooth.
  • 2. Cream Butter & Sugars: In a large bowl, cream softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy (2-3 minutes).
  • 3. Add Wet Ingredients: Beat in eggs one at a time, then vanilla extract. Stir in the smooth cottage cheese until just combined.
  • 4. Combine Dry: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add dry ingredients to wet, mixing on low speed until just combined. Do not overmix.
  • 5. Fold in Chocolate: Stir in chocolate chips (and any optional mix-ins) until evenly distributed.
  • 6. Scoop & Bake: Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 9-12 minutes, or until edges are golden and centers are still soft.
  • 7. Cool: Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
