Ingredients
- 3–4 English or Persian cucumbers, thinly sliced
- 1 tsp salt (plus more for seasoning)
- 1/4 cup finely chopped fresh dill
- 1/4 cup thinly sliced red onion or shallot
- 1 cup full-fat sour cream (or plain Greek yogurt)
- 2 tbsp white vinegar
- 1 tsp granulated sugar
- Freshly ground black pepper, to taste
- Optional: paprika, garlic powder, celery seed
Instructions
- 1. Prep Cucumbers: Thinly slice cucumbers. Place in a colander, sprinkle with 1 tsp salt, and let sit for 20-30 minutes. Squeeze out excess water.
- 2. Prepare Aromatics: Thinly slice red onion or shallot.
- 3. Whisk Dressing: In a bowl, whisk sour cream, white vinegar, sugar, fresh dill, salt, and pepper. Taste and adjust seasoning.
- 4. Combine & Toss: Add drained cucumbers and sliced onion to the dressing. Toss gently until evenly coated.
- 5. Chill & Serve: Cover and refrigerate for at least 30 minutes. Stir before serving and garnish with extra dill if desired.
