Ingredients
- 1 tbsp olive oil or butter
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 5 oz fresh baby spinach
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and freshly ground black pepper to taste
- Pinch of nutmeg
- 16 oz package fresh gnocchi
- 4 oz crumbled feta cheese
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Prep Ingredients: Dice onion, mince garlic, measure broth and cream, and have spinach and feta ready.
- Sauté Aromatics: In a large skillet over medium heat, melt 1 tbsp olive oil/butter. Add onion and cook until translucent (5-7 mins). Add garlic and cook for 1 minute until fragrant.
- Wilt Spinach: Add spinach to the skillet and cook, stirring, until completely wilted (2-3 mins). Remove spinach and aromatics from the pan and set aside.
- Build Cream Sauce: Add 1 tbsp butter to the skillet. Once melted, sprinkle in 1 tbsp flour and whisk for 1 minute. Slowly pour in vegetable broth, whisking constantly. Bring to a simmer, then stir in heavy cream and 1/4 cup Parmesan. Season with salt, pepper, and nutmeg. Simmer gently for 3-5 minutes to thicken.
- Cook Gnocchi & Combine: While sauce simmers, cook gnocchi according to package directions (usually 2-3 mins until they float). Drain well. Add cooked gnocchi, reserved spinach/aromatics, and most of the feta to the cream sauce. Stir gently to combine.
- Serve: Taste and adjust seasonings. Serve immediately, garnished with remaining feta and optional fresh parsley.
