Ingredients

  • 1 tbsp olive oil or butter
  • 1 large yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth, plus more if needed
  • 2 medium potatoes (Russet or Yukon Gold), peeled and cubed
  • 1 medium zucchini, chopped
  • 1 cup broccoli florets
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 1/4 cup milk (dairy or non-dairy, optional)
  • Fresh parsley or chives, for garnish (optional)

Instructions

  • 1. Prep Vegetables: Wash and chop all vegetables as directed.
  • 2. Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté for 8-10 minutes until softened. Add garlic and cook for 1 minute more.
  • 3. Deglaze (if needed): If browned bits are stuck, add a splash of broth and scrape them up.
  • 4. Simmer: Add potatoes, zucchini, broccoli, remaining broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until vegetables are tender.
  • 5. Blend: Remove bay leaf. Using an immersion blender, blend soup until smooth. Stir in milk if desired.
