Ingredients

  • 1 medium head green cabbage, finely shredded
  • 1 medium head red cabbage, finely shredded (optional, for color)
  • 2 ripe but firm mangoes, peeled and diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (from 23 limes)
  • 3 tablespoons olive oil
  • 12 tablespoons honey or agave nectar (adjust to taste)
  • 1 small jalapeño, finely minced (remove seeds for less heat)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup thinly sliced red onion
  • Optional: 1/4 cup toasted sesame seeds, for garnish

Instructions

  • Step 1: Prepare Vegetables: Finely shred both green and red cabbage. Peel and dice the mangoes into small, uniform pieces. Finely mince the jalapeño and chop the fresh cilantro.
  • Step 2: Make the Dressing: In a medium bowl, whisk together the lime juice, olive oil, honey (or agave), minced jalapeño, salt, and black pepper until well combined and slightly emulsified. Taste and adjust seasonings as desired.
  • Step 3: Combine Slaw: In a large mixing bowl, combine the shredded cabbage, diced mango, chopped cilantro, and optional red onion.
  • Step 4: Dress and Chill: Pour the prepared dressing over the slaw ingredients. Gently toss with tongs or clean hands until all ingredients are evenly coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
