Ingredients
- 1.5 cups mashed cooked yam (from about 2 medium orange-fleshed sweet potatoes)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted and cooled
- 1/2 cup buttermilk
- 2 large eggs
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line with parchment paper.
- Peel and cube yams. Boil until fork-tender, then drain and mash until smooth. Let cool completely.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a separate medium bowl, whisk together cooled mashed yam, melted butter, buttermilk, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined. Do not overmix.
- Pour batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan on a wire rack for 15-20 minutes before removing. Cool completely before slicing and serving.
