Ingredients

  • 1.5 cups mashed cooked yam (from about 2 medium orange-fleshed sweet potatoes)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup buttermilk
  • 2 large eggs

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line with parchment paper.
  • Peel and cube yams. Boil until fork-tender, then drain and mash until smooth. Let cool completely.
  • In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • In a separate medium bowl, whisk together cooled mashed yam, melted butter, buttermilk, and eggs until smooth.
  • Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined. Do not overmix.
  • Pour batter into the prepared pan and spread evenly.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
