  • 1 cup (170g) good quality chocolate chips or chopped dark chocolate (60-70% cocoa)
  • 1 cup (200g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • Optional: Flaky sea salt for topping, instant espresso powder (1 tsp)

Instructions

  • 1. Prepare: Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  • 2. Melt Chocolate & Butter: In a large microwave-safe bowl, melt butter and chocolate chips together in 30-second intervals, stirring until smooth. Let cool slightly.
  • 3. Combine Wet Ingredients: Whisk sugar into the cooled chocolate mixture. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  • 4. Combine Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, and salt.
  • 5. Fold: Add dry ingredients to wet ingredients. Gently fold with a rubber spatula until just combined. Do not overmix.
