Ingredients
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (170g) good quality chocolate chips or chopped dark chocolate (60-70% cocoa)
- 1 cup (200g) granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup (60g) all-purpose flour
- 1/4 cup (25g) unsweetened cocoa powder
- 1/2 teaspoon salt
- Optional: Flaky sea salt for topping, instant espresso powder (1 tsp)
Instructions
- 1. Prepare: Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
- 2. Melt Chocolate & Butter: In a large microwave-safe bowl, melt butter and chocolate chips together in 30-second intervals, stirring until smooth. Let cool slightly.
- 3. Combine Wet Ingredients: Whisk sugar into the cooled chocolate mixture. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
- 4. Combine Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, and salt.
- 5. Fold: Add dry ingredients to wet ingredients. Gently fold with a rubber spatula until just combined. Do not overmix.
- 6. Fill & Bake: Divide batter evenly among muffin cups, filling about two-thirds full. Bake for 18-22 minutes, or until edges are set and centers are still slightly soft.
- 7. Cool: Let cool in the muffin tin for 5-10 minutes before transferring to a wire rack to cool completely.
