Ingredients
- 2 English or Persian cucumbers, sliced into half-moons
- 1 pint cherry or grape tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved if large
- 1/4 cup fresh basil leaves, torn or chiffonaded
- 3 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper, to taste
- 2 tablespoons balsamic glaze, for drizzling
Instructions
- Prep Your Veggies: Wash cucumbers and tomatoes. Slice cucumbers into 1/4-inch half-moons. Halve cherry tomatoes. Drain and halve fresh mozzarella balls if needed.
- Combine & Dress: In a large bowl, gently combine cucumbers, tomatoes, and mozzarella. Drizzle with olive oil, season with salt and pepper, and toss gently. Add fresh basil and toss again.
