Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (23 large), pounded to 1/2-inch thickness
  • 1/4 cup fresh lime juice (from 23 limes)
  • 2 tablespoons olive oil, plus more for cooking
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey or maple syrup (optional, for balance)
  • 1/4 cup fresh cilantro, chopped (plus more for garnish)
  • 2 ripe avocados, diced
  • Lime wedges, for serving

Instructions

  • 1. Prepare Chicken & Marinade: Pound chicken breasts to 1/2-inch thickness. In a bowl or resealable bag, whisk lime juice, 2 tbsp olive oil, chili powder, cumin, paprika, garlic powder, salt, pepper, honey (if using), and 1/4 cup chopped cilantro. Add chicken, coat well, and marinate in the refrigerator for 30 minutes to 4 hours.
  • 2. Cook Chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Remove chicken from marinade (discard excess marinade) and cook for 4-6 minutes per side, until golden brown and cooked through (internal temperature 165°F / 74°C). Cook in batches if necessary to avoid overcrowding.
  • 3. Rest & Slice: Transfer cooked chicken to a cutting board and let rest for 5 minutes. Slice against the grain into strips or dice.
  • 4. Assemble & Serve: Arrange sliced chicken on plates. Top generously with diced avocado and sprinkle with extra fresh cilantro. Serve immediately with lime wedges.
