Ingredients

  • 1 large, fresh butter croissant
  • 2 slices bacon or 1 breakfast sausage patty
  • 12 large eggs
  • 12 slices (or 1/4 cup shredded) melting cheese (cheddar, Swiss, provolone)
  • Salt and freshly ground black pepper, to taste
  • Optional: butter or cooking spray for eggs
  • Optional add-ins: sliced avocado, spinach, tomato, sriracha mayo, pesto

Instructions

  • Step 1: Prepare Proteins. Cook bacon in a skillet over medium heat until crispy, or cook sausage patty until browned and cooked through. Drain excess fat and set aside, keeping warm.
  • Step 2: Cook Eggs. In the same skillet, cook eggs to your preferred style (scrambled, fried, or folded). Season with salt and pepper.
  • Step 3: Prepare Croissant. Carefully slice the croissant in half horizontally. Lightly toast the cut sides in a dry skillet or toaster oven until golden and slightly crisp.
  • Step 4: Assemble. Place the bottom half of the toasted croissant on a plate. Layer with bacon/sausage, then the cooked egg.
  • Step 5: Melt Cheese. Top the egg with cheese slices. If ingredients are not hot enough to melt the cheese, briefly microwave the bottom half with fillings for 15-20 seconds, or place under a broiler for 1 minute until cheese is gooey.
