- 1 large cucumber, sliced
- 1 pint cherry or grape tomatoes, halved
- 1 bell pepper (any color), thinly sliced
- Optional: 1/4 red onion, thinly sliced
- Optional add-ins: diced avocado, crumbled feta/goat cheese, toasted nuts/seeds, cooked chickpeas
- For the Lemon Dressing:
- 1/4 cup fresh lemon juice (approx. 1–2 lemons)
- 1/2 cup extra virgin olive oil
- 1 tsp Dijon mustard
- 1/2 tsp honey or maple syrup (or to taste)
- 1 clove garlic, minced
- 1/2 tsp dried oregano (or 1 tbsp fresh chopped herbs like parsley/dill)
- 1/4 tsp salt (or to taste)
- 1/8 tsp freshly ground black pepper (or to taste)
Instructions
- 1. Prepare Salad Base: Wash and thoroughly dry your mixed greens using a salad spinner or paper towels. Place in a large mixing bowl.
- 2. Chop Vegetables: Slice cucumber, halve tomatoes, and thinly slice bell pepper and red onion (if using). Add to the bowl with greens.
- 3. Whisk Dressing: In a small bowl or jar, combine lemon juice, olive oil, Dijon mustard, honey/maple syrup, minced garlic, oregano, salt, and pepper. Whisk vigorously or shake until emulsified. Taste and adjust seasoning.
- 4. Dress & Toss: Just before serving, drizzle about 1/2 to 2/3 of the dressing over the salad ingredients. Toss gently with tongs until all components are lightly coated. Add more dressing if desired.
