Ingredients
- For the Edible Cookie Dough Filling:
- 1/2 cup (113g) unsalted butter, softened
- 1/4 cup (50g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk (any kind)
- 1 cup (120g) all-purpose flour, heat-treated
- 1/4 teaspoon salt
- 1/2 cup (85g) mini chocolate chips
- For the Fudgy Brownie Cookies:
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup (75g) unsweetened cocoa powder
- 1 cup (120g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (85g) chocolate chips (optional, for extra chocolatey cookies)
Instructions
- 1. Prepare Edible Cookie Dough: In a bowl, cream softened butter, granulated sugar, and brown sugar. Mix in vanilla and milk. Gradually add heat-treated flour and salt, then fold in mini chocolate chips. Roll into 1-inch balls and freeze for 30 minutes.
- 2. Make Brownie Batter: In a large bowl, melt butter. Stir in granulated and brown sugars. Whisk in eggs one at a time, then vanilla. In a separate bowl, whisk cocoa powder, flour, baking powder, and salt. Gradually add dry to wet ingredients, mixing until just combined. Fold in optional chocolate chips.
- 3. Assemble & Bake: Preheat oven to 350°F (175°C). Take 1.5-2 tablespoons of brownie dough, flatten, place a frozen cookie dough ball in the center, and seal. Place on parchment-lined baking sheets. Bake for 10-12 minutes until edges are set but centers are soft.
- 4. Cool: Let cool on baking sheets for 5-10 minutes, then transfer to a wire rack to cool completely.
