Ingredients
- 1.5 lbs fresh lobster (about 2 small lobsters), cooked and chilled
- 4 brioche hot dog buns (top-split preferred)
- 6 tbsp unsalted butter, divided
- 2 cloves garlic, minced
- 1/2 cup full-fat mayonnaise
- 1 tbsp fresh lemon juice
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh chives, chopped
- 1/4 tsp salt, or to taste
- 1/8 tsp black pepper, or to taste
- Pinch of paprika (optional)
Instructions
- 1. Prep the Lobster: Cook lobster (steam or boil), chill in an ice bath, then extract meat. Cut into bite-sized pieces (1/2-3/4 inch) and refrigerate for at least 30 minutes.
- 2. Make Garlic Butter: Melt 4 tbsp butter with minced garlic over low heat for 2-3 minutes until fragrant. Set aside.
- 3. Toast Buns: Brush brioche buns with some garlic butter. Toast in a skillet over medium-low heat for 2-3 minutes per side until golden and crisp.
- 4. Craft Filling: In a bowl, combine chilled lobster, mayonnaise, lemon juice, dill, chives, 1 tbsp garlic butter, salt, pepper, and paprika (if using). Gently fold to combine, avoiding overmixing. Taste and adjust seasoning.
