Ingredients
- 1 lb sirloin or ribeye steak, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tbsp butter
- Salt and freshly ground black pepper, to taste
- 8 cloves garlic, minced
- 1 cup chicken or beef broth
- 1/2 cup heavy cream
- 19 oz fresh cheese tortellini
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup fresh parsley, chopped, for garnish
Instructions
- Prep Steak: Pat steak dry, cut into 1-inch cubes, and season generously with salt and pepper.
- Sear Steak: Heat olive oil in a large skillet over medium-high heat. Sear steak in batches for 2-3 minutes per side until browned. Remove and set aside.
- Build Sauce Base: Reduce heat to medium, add butter to the skillet. Sauté minced garlic for 1 minute until fragrant. Pour in broth, scraping up browned bits, and bring to a simmer.
- Cook Tortellini: In a separate pot, cook tortellini according to package directions until al dente. Drain well.
- Combine: Reduce heat to low, stir heavy cream into the sauce. Add seared steak and drained tortellini to the pan. Stir in half of the Parmesan cheese.
- Serve: Taste and adjust seasonings. Garnish with fresh parsley and remaining Parmesan cheese. Serve immediately.
