Ingredients

  • 1 cup warm water (105-115°F / 40-46°C)
  • 1 teaspoon granulated sugar
  • 2 ¼ teaspoons active dry yeast (one standard packet)
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • ½ cup plain Greek yogurt (full-fat recommended)
  • 2 tablespoons olive oil, plus more for greasing and brushing
  • Optional toppings: sesame seeds, nigella seeds, fresh herbs, flaky sea salt

Instructions

  • In a small bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes until foamy.
  • In a large bowl, whisk together flour and salt. Create a well in the center.
  • Pour in the activated yeast mixture, Greek yogurt, and 2 tablespoons olive oil. Mix until a shaggy dough forms.
  • Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  • Place dough in a lightly oiled bowl, turn to coat, cover, and let rise in a warm place for 1 to 1.5 hours, or until doubled.
  • Gently punch down dough, divide into 6-8 pieces, and shape each into an oval or round flatbread, about 1/4 inch thick.
  • Place shaped flatbreads on a parchment-lined baking sheet, cover loosely, and let rise for another 20-30 minutes.
  • Preheat oven to 450°F (230°C) with a baking stone or inverted baking sheet inside for at least 20 minutes.
  • Carefully transfer flatbreads to the hot baking surface. Bake for 6-10 minutes, until puffed and golden brown.
  • Brush with olive oil or melted butter immediately after baking, if desired. Serve warm.
