Ingredients
- 1 lb ground chicken (90/10 or 92/8 recommended)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp brown sugar
- ½ tsp salt
- ¼ tsp black pepper
- 4 fresh pineapple slices (½-inch thick)
- 1 tbsp olive oil (for grilling pineapple)
- 4 burger buns (brioche or potato recommended)
- For the Glaze:
- ¼ cup pineapple juice
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp rice vinegar
- Optional Toppings:
- Lettuce leaves
- Tomato slices
- Red onion slices
- Avocado slices
- Cheese slices (Monterey Jack or Provolone)
Instructions
- 1. Prepare Chicken Patties: In a bowl, gently mix ground chicken with garlic powder, onion powder, paprika, brown sugar, salt, and pepper. Form into four ¾-inch thick patties, making a slight indentation in the center.
- 2. Grill Pineapple: Preheat grill to medium-high. Lightly brush pineapple slices with olive oil. Grill 2-3 minutes per side until grill marks appear and pineapple is caramelized. Set aside.
- 3. Cook Chicken Burgers: Lightly oil grill grates. Place patties on grill and cook 5-7 minutes per side, or until internal temperature reaches 165°F (74°C). Add cheese during the last minute if desired.
- 4. Make Glaze: In a small saucepan, combine pineapple juice, soy sauce, brown sugar, and rice vinegar. Simmer over medium heat for 5-7 minutes until slightly thickened.
- 5. Assemble Burgers: Lightly toast buns. Spread glaze on both halves. Place chicken patty on bottom bun, top with grilled pineapple, desired toppings, and top bun. Serve immediately.
