Description

This one-pan wonder features tender chicken and caramelized sweet potatoes coated in a sticky, savory-sweet honey garlic glaze. It’s a flavorful and easy weeknight meal that the whole family will adore.


Ingredients

  • 1.5 lbs bone-in, skin-on chicken thighs (about 46 thighs)
  • 1.5 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • For the Honey Garlic Sauce:
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce (or tamari for GF)
  • 4 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp toasted sesame oil (optional, for finishing)
  • Optional garnishes: chopped fresh parsley, cilantro, or green onions, toasted sesame seeds

Instructions

  • Preheat your oven to 400°F (200°C). If desired, place a large baking sheet in the oven to preheat.
  • Pat chicken thighs thoroughly dry with paper towels. Season generously with salt and pepper.
  • In a large bowl, toss the sweet potato cubes with 2 tablespoons of olive oil, a pinch of salt, and pepper. Spread them in a single layer on the preheated baking sheet.
  • In a separate small bowl, whisk together the honey, soy sauce, minced garlic, and apple cider vinegar. Reserve about 1/4 cup of this sauce for later.
  • Add the seasoned chicken thighs to the baking sheet with the sweet potatoes. Pour the remaining honey garlic sauce over the chicken and sweet potatoes. Toss everything gently to ensure all pieces are well coated. Arrange in a single layer, ensuring not to overcrowd the pan.
  • Roast for 20-25 minutes, or until the chicken begins to brown and the sweet potatoes start to soften.
  • Remove the pan from the oven. Drizzle the reserved 1/4 cup of honey garlic sauce over the chicken and sweet potatoes. Toss gently to redistribute the glaze.
  • Return to the oven and roast for another 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender and caramelized. The sauce should be sticky and reduced.
  • If desired, broil for 2-3 minutes at the end for extra crispiness, watching carefully to prevent burning.
  • Remove from oven, drizzle with 1 teaspoon of toasted sesame oil (if using), and let rest for 5-10 minutes before serving. Garnish with fresh herbs or toasted sesame seeds if desired.
