A vibrant and perfectly balanced homemade vinaigrette, combining the sweetness of honey with the tang of fresh lemon. This versatile dressing is ideal for salads, grilled meats, and roasted vegetables.
Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh lemon juice (from 1–2 lemons)
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- In a medium bowl or a jar with a tight-fitting lid, combine the fresh lemon juice, honey, Dijon mustard, minced garlic, salt, and black pepper. Whisk or shake vigorously until the honey is dissolved and ingredients are well combined.
- Slowly drizzle in the extra virgin olive oil while continuously whisking (or shaking the jar vigorously) until the mixture is emulsified and creamy.
- Taste the vinaigrette and adjust seasoning as needed, adding more salt, pepper, honey, or lemon juice to your preference.
- Serve immediately or store in an airtight container in the refrigerator. Shake well before each use.
