Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (from 12 lemons)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • In a medium bowl or a jar with a tight-fitting lid, combine the fresh lemon juice, honey, Dijon mustard, minced garlic, salt, and black pepper. Whisk or shake vigorously until the honey is dissolved and ingredients are well combined.
  • Slowly drizzle in the extra virgin olive oil while continuously whisking (or shaking the jar vigorously) until the mixture is emulsified and creamy.
  • Taste the vinaigrette and adjust seasoning as needed, adding more salt, pepper, honey, or lemon juice to your preference.
  • Serve immediately or store in an airtight container in the refrigerator. Shake well before each use.
