This dish features perfectly seared chicken bathed in a vibrant, sweet-tangy sauce made with fresh strawberries and bright lemon. It’s a flavor explosion that’s surprisingly easy to make.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs (or breasts)
- 2 tbsp olive oil, divided
- 1 tsp salt, divided
- 0.5 tsp black pepper, divided
- 1 lemon, zested and juiced
- 2 sprigs fresh rosemary or thyme
- 1 tbsp unsalted butter
- 2 cloves garlic, minced
- 0.25 cup white wine or chicken broth (for deglazing)
- 2 cups fresh strawberries, hulled and sliced
- 1 tbsp honey or maple syrup
- 0.5 cup chicken broth
- Fresh parsley or basil, for garnish (optional)
Instructions
- 1. Marinate Chicken: Pat chicken dry. In a bowl, combine chicken with 1 tbsp olive oil, 0.5 tsp salt, 0.25 tsp pepper, half of the lemon zest, and 1 sprig of rosemary/thyme. Marinate 15-20 mins at room temp.
- 2. Sear Chicken: Heat an oven-safe skillet over medium-high heat with 1 tbsp olive oil. Sear chicken 4-5 mins per side until golden brown. Remove and set aside.
- 3. Make Sauce: Reduce heat to medium. Add butter to skillet. Sauté garlic 30 seconds. Deglaze with wine/broth. Stir in strawberries, remaining lemon zest, lemon juice, honey, and 0.5 cup chicken broth. Simmer 5-7 mins until strawberries break down.
- 4. Finish in Oven: Preheat oven to 375°F (190°C). Return chicken to skillet, nestling into sauce. Bake 15-20 mins, or until chicken reaches 165°F (74°C) and sauce thickens.
- 5. Rest & Serve: Let chicken rest 5-10 mins before serving. Garnish with fresh herbs if desired.
