- 2 tbsp light olive oil or avocado oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne pepper (optional, for a kick)
- ¾ tsp sea salt, or to taste
- ¼ tsp freshly ground black pepper, or to taste
- Fresh parsley or chives, chopped (for garnish, optional)
Instructions
- Preheat oven to 400°F (200°C). Line one or two large baking sheets with parchment paper.
- In a large bowl, combine the cut vegetables with the olive or avocado oil. Toss until all pieces are lightly coated.
