Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage (or a mix)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tbsp Italian seasoning
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 (19 oz) package fresh or frozen cheese tortellini
  • 1/2 cup ricotta cheese
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • Salt and freshly ground black pepper to taste
  • Fresh basil, chopped, for garnish
  • Red pepper flakes (optional, for garnish)

Instructions

  • 1. Brown the Meat: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground meat, breaking it up, and cook until browned (5-7 mins). Drain excess fat, remove meat, and set aside.
  • 2. Sauté Aromatics: Return pot to medium heat. Add diced onion and cook until softened (3-5 mins). Stir in minced garlic and cook for 1 minute until fragrant.
  • 3. Build the Sauce Base: Stir in tomato paste and Italian seasoning, cooking for 1-2 minutes. Pour in crushed tomatoes and broth. Return browned meat to the pot. Bring to a gentle simmer.
  • 4. Simmer the Soup: Reduce heat to low, cover, and simmer for 15-20 minutes to allow flavors to meld.
  • 5. Add the Tortellini: Increase heat to medium-low. Add tortellini and cook according to package directions (3-5 mins for fresh) until al dente.
  • 6. Stir in Dairy: Remove pot from heat. Stir in ricotta cheese, softened cream cheese, and half of the Parmesan until melted and creamy. Taste and adjust seasonings.
  • 7. Serve and Garnish: Ladle into bowls. Garnish generously with remaining Parmesan, fresh basil, and red pepper flakes if desired. Serve immediately.
