Ingredients

  • 1 ½ cups finely ground graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 (8-ounce) packages full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon lemon zest
  • 1 (12-ounce) jar good quality lemon curd (or homemade)
  • 1 ½ cups fresh blueberries, divided
  • 912 no-bake lasagna noodles
  • 1 (8-ounce) container stabilized whipped topping (like Cool Whip), thawed, or 2 cups homemade stabilized whipped cream

Instructions

  • Prepare the Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press firmly and evenly into the bottom of a 9×13 inch baking dish. Chill in the refrigerator for at least 15 minutes.
  • Make the Cream Cheese Layer: In a large bowl, beat softened cream cheese, powdered sugar, and lemon zest with an electric mixer until smooth and creamy, scraping down the sides as needed.
  • First Layer: Spread half of the lemon curd evenly over the chilled graham cracker crust.
  • Add Noodles & Blueberries: Arrange a single layer of no-bake lasagna noodles over the lemon curd, breaking to fit as needed. Sprinkle half of the fresh blueberries over the noodles.
  • Cream Cheese Layer: Gently spread half of the cream cheese mixture over the blueberries and noodles.
  • Repeat Layers: Add another layer of no-bake lasagna noodles, followed by the remaining fresh blueberries, and then the remaining cream cheese mixture.
  • Final Touches: Spread the remaining lemon curd over the top cream cheese layer. Gently spread the whipped topping over the entire lasagna.
  • Chill: Cover the dish tightly with plastic wrap and refrigerate for at least 4-6 hours, or preferably overnight, to allow the layers to set.
