- 1/4 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 small egg
- 1/2 tsp fresh lemon zest
- 1 tbsp fresh lemon juice
- 1/2 tsp baking powder
- 1/4 tsp vanilla extract

Instructions
- 1. Lightly grease a microwave-safe mug (at least 12-14 oz).
- 2. In the mug (or a small bowl), combine cottage cheese, egg, and vanilla extract. Blend with an immersion blender or vigorously mash with a fork until very smooth with no curds.
