  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • ¼ cup (60ml) limoncello liqueur (or fresh lemon juice + 1 tsp lemon extract for non-alcoholic)
  • 3 cups (360g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • For the Glaze:
  • 2 cups (240g) confectioners’ sugar
  • 34 tablespoons limoncello liqueur (or fresh lemon juice for non-alcoholic)

Instructions

  • Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, cream together butter and granulated sugar until light and fluffy (2-3 minutes).
  • Beat in eggs one at a time, then mix in limoncello until just combined.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet, mixing on low speed until just combined. Do not overmix.
  • Cover dough and refrigerate for at least 1 hour.
  • Scoop rounded tablespoons of dough, roll into balls, and place 2 inches apart on prepared baking sheets.
  • Bake for 10-12 minutes, until edges are lightly golden and centers are set. Cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
