Ingredients
- 1 cup (226g) unsalted butter, softened to room temperature
- 1 ½ cups (300g) granulated sugar
- 2 large eggs, room temperature
- ¼ cup (60ml) limoncello liqueur (or fresh lemon juice + 1 tsp lemon extract for non-alcoholic)
- 3 cups (360g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- For the Glaze:
- 2 cups (240g) confectioners’ sugar
- 3–4 tablespoons limoncello liqueur (or fresh lemon juice for non-alcoholic)
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together butter and granulated sugar until light and fluffy (2-3 minutes).
- Beat in eggs one at a time, then mix in limoncello until just combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet, mixing on low speed until just combined. Do not overmix.
- Cover dough and refrigerate for at least 1 hour.
- Scoop rounded tablespoons of dough, roll into balls, and place 2 inches apart on prepared baking sheets.
- Bake for 10-12 minutes, until edges are lightly golden and centers are set. Cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk confectioners’ sugar and limoncello until smooth. Drizzle or dip cooled cookies in glaze. Let set before serving.
