Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp unsweetened cocoa powder
  • ¼ cup freeze-dried strawberries, powdered
  • Optional: few drops pink/red gel food coloring

Instructions

  • In a large bowl, cream softened butter and granulated sugar until light and fluffy (2-3 mins).
  • Beat in the egg until just combined, then stir in vanilla extract.
  • Gradually add flour, baking powder, and salt, mixing until just combined. Divide dough into three equal portions.
  • Mix cocoa powder into the first portion. Mix powdered freeze-dried strawberries and optional food coloring into the second portion. Leave the third portion plain vanilla.
  • Flatten each dough portion into a disc, wrap, and chill for at least 30 minutes.
  • On a lightly floured surface, roll each dough disc into an 8×10 inch rectangle. Layer vanilla, then strawberry, then chocolate dough. Roll tightly into a log.
  • Wrap the log and chill for at least 1 hour. Preheat oven to 350°F (175°C).
  • Slice the chilled log into ¼-inch thick rounds. Place on parchment-lined baking sheets.
  • Bake for 9-11 minutes, until edges are lightly golden. Cool on sheets for a few minutes, then transfer to a wire rack to cool completely.
