Description

Ingredients

  • 1 ½ cups Granulated sugar

  • ¾ cup Light brown sugar, packed

  • ½ cup Heavy cream

  • 6 tbsp Unsalted butter, cut into pieces

  • 1 ½ cups Pecans, chopped

  • 1 tsp Vanilla extract

  • (Optional) A pinch of sea salt


Instructions

  1. Combine Ingredients: In a medium saucepan with a heavy bottom, combine granulated sugar, brown sugar, heavy cream, and unsalted butter. Stir gently over medium heat until the sugars dissolve and the mixture begins to bubble.

  2. Boil: Once it reaches a rolling boil, stop stirring. Let it boil for about 5 minutes until the mixture turns a caramel color.

  3. Check Temperature: Use a candy thermometer and cook until the mixture reaches the Soft Ball Stage (235°F / 113°C).

  4. Add Flavor: Remove from heat immediately. Stir in the chopped pecans and vanilla extract vigorously. Let the mixture cool slightly (about 1-2 minutes) and thicken just a bit.

  5. Scoop: Quickly drop spoonfuls of the mixture onto wax paper or parchment paper. Allow them to cool and firm up completely (about 30 minutes) before serving.

  • Storage: Store in an airtight container at room temperature for up to 2 weeks.

  • Pro Tip: Humidity is the enemy of pralines. Try to make them on a dry day for the best texture.
