Description

These delightful No Bake Carrot Cake Bites offer all the flavor of classic carrot cake without turning on your oven. They’re moist, spiced, and naturally sweet, perfect for a healthy snack or treat.


Ingredients

  • 1 cup rolled oats (certified gluten-free if needed)
  • 1 cup pitted Medjool dates, softened if firm
  • 1/2 cup shredded carrots (freshly grated is best)
  • 2 oz cream cheese, softened (full-fat recommended)
  • 1/4 cup chopped pecans or walnuts, lightly toasted
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: Shredded coconut, extra chopped nuts, or cinnamon sugar for coating

Instructions

  • Prep Your Dates and Oats: If dates are firm, soak in warm water for 10 minutes, then drain well. In a food processor, pulse rolled oats until a coarse flour forms.
  • Combine Wet Ingredients and Spices: Add softened dates, cream cheese, vanilla extract, cinnamon, nutmeg, ginger, and salt to the food processor. Blend until a sticky, smooth paste forms.
  • Incorporate Carrots and Nuts: Add shredded carrots and chopped pecans/walnuts to the processor. Pulse briefly, just until combined, being careful not to over-process.
  • Form the Bites: Roll the mixture into 1-inch balls. If sticky, chill the mixture for 15-20 minutes first.
  • Optional Coatings and Chill: Roll bites in optional coatings if desired. Place on a plate or baking sheet and chill in the refrigerator for at least 30 minutes to firm up before serving.
