Ingredients
- 1 cup (225g) full-fat cottage cheese
- 1/2 cup (45g) unsweetened Dutch-processed cocoa powder
- 1/2 cup (50g) chocolate or vanilla protein powder
- 1/4 cup (60g) creamy natural peanut butter or almond butter
- 2–4 tablespoons granulated sweetener (erythritol, stevia blend, or sugar), to taste
- 1 teaspoon pure vanilla extract
- Optional: 1/4 cup mini chocolate chips or other mix-ins
Instructions
- 1. Prepare the Cottage Cheese: In a high-speed blender or food processor, blend the cottage cheese until completely smooth and creamy, with no curds remaining.
- 2. Combine Wet Ingredients: In a large bowl, combine the blended cottage cheese, nut butter, and vanilla extract. Stir until well combined.
- 3. Add Dry Ingredients: Add the cocoa powder, protein powder, and sweetener to the wet mixture. Mix until just combined and a thick, brownie batter-like consistency is achieved.
- 4. Chill the Mixture: Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
- 5. Roll into Bites: Scoop out 1-tablespoon portions and roll them into smooth balls. If using mix-ins, gently fold them in before rolling or press them onto the outside.
- 6. Optional Coating: For extra flavor, roll bites in additional cocoa powder, chopped nuts, or shredded coconut.
- 7. Serve & Store: Enjoy immediately or refrigerate for later. Store in an airtight container in the refrigerator for up to 5-7 days, or freeze for longer storage.
