  • ¼ cup melted coconut oil or unsalted butter
  • ¼ cup maple syrup, plus more to taste
  • ¼ cup creamy nut butter (almond, peanut, or sunflower seed butter)
  • Pinch of salt
  • 2 cups plain Greek yogurt (full-fat or 2% for best texture)
  • 1 ½ cups fresh or frozen mixed berries
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds

Instructions

  • Prepare Granola Base: Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides. In a medium bowl, combine rolled oats, melted coconut oil, ¼ cup maple syrup, nut butter, and salt. Mix well until oats are fully coated. Press mixture firmly and evenly into the prepared pan.
  • Make Yogurt Berry Layer: In a blender or food processor, combine Greek yogurt, berries, 1-2 tablespoons additional maple syrup (to taste), vanilla extract, and chia seeds. Blend until completely smooth and creamy.
  • Assemble Bars: Pour the blended yogurt mixture over the granola base in the pan. Spread evenly with an offset spatula or the back of a spoon.
  • Freeze: Place the pan in the freezer for at least 3-4 hours, or until the yogurt layer is completely firm.
  • Slice and Serve: Once frozen, lift the parchment paper to remove the slab from the pan. Place on a cutting board and use a sharp, warm knife to slice into 9-12 bars. Store in an airtight container in the freezer, separating layers with parchment paper.
