This incredibly easy one-pan meal features savory kielbasa and tender-crisp vegetables coated in a sticky, sweet-savory honey garlic glaze. It’s perfect for a delicious weeknight dinner with minimal cleanup.
Ingredients
- 1 lb (450g) smoked kielbasa, sliced into 1/2-inch rounds
- 1 head broccoli, cut into florets
- 1 large bell pepper (any color), chopped into 1-inch pieces
- 1/2 red onion, chopped into 1-inch pieces
- 2 tbsp olive oil, divided
- Salt and freshly ground black pepper, to taste
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp apple cider vinegar
Instructions
- Preheat oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or foil.
- In a large bowl, combine sliced kielbasa, broccoli florets, bell pepper, and red onion. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and toss to coat evenly.
- Spread the kielbasa and vegetables in a single layer on the prepared baking sheet. Ensure not to overcrowd the pan; use two if necessary.
- Roast for 15 minutes.
- While roasting, whisk together honey, minced garlic, soy sauce, and apple cider vinegar in a small bowl to make the glaze.
- Remove the baking sheet from the oven. Drizzle about half of the honey garlic glaze over the kielbasa and veggies, tossing gently to coat.
- Return to the oven and roast for another 10-15 minutes, or until vegetables are tender-crisp, kielbasa is browned, and the glaze is sticky.
- Serve immediately, optionally with rice or a side salad.
