Ingredients
- For the Crumble Topping & Base:
- 1 cup (2 sticks) unsalted butter, melted
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 cup rolled oats
- 1/2 teaspoon salt
- For the Peach Filling:
- 4 cups fresh peaches, peeled, pitted, and sliced (about 4–5 medium peaches)
- 1/4 cup granulated sugar (adjust to peach sweetness)
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- For the Cream Cheese Layer:
- 8 ounces (1 block) cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
Instructions
- 1. Prepare Oven & Crumble: Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang. In a large bowl, combine melted butter, flour, granulated sugar, brown sugar, oats, and salt. Mix until coarse crumbs form. Press two-thirds of the mixture into the pan for the base.
- 2. Make Cream Cheese Layer: In a medium bowl, beat softened cream cheese and 1/4 cup granulated sugar until smooth. Beat in vanilla, then the egg until just combined. Pour over the crumble base.
- 3. Prepare Peach Filling: In another bowl, gently toss sliced peaches with 1/4 cup granulated sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Spread evenly over the cream cheese layer.
- 4. Top & Bake: Sprinkle the remaining crumble mixture over the peaches. Bake for 45-55 minutes, or until the topping is golden brown and the filling is bubbly.
