  • For the Peach Filling:
  • 4 cups fresh peaches, peeled, pitted, and sliced (about 45 medium peaches)
  • 1/4 cup granulated sugar (adjust to peach sweetness)
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • For the Cream Cheese Layer:
  • 8 ounces (1 block) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  • 1. Prepare Oven & Crumble: Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang. In a large bowl, combine melted butter, flour, granulated sugar, brown sugar, oats, and salt. Mix until coarse crumbs form. Press two-thirds of the mixture into the pan for the base.
  • 2. Make Cream Cheese Layer: In a medium bowl, beat softened cream cheese and 1/4 cup granulated sugar until smooth. Beat in vanilla, then the egg until just combined. Pour over the crumble base.
  • 3. Prepare Peach Filling: In another bowl, gently toss sliced peaches with 1/4 cup granulated sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Spread evenly over the cream cheese layer.
