Description

Ingredients

  • 2 cups (240g) All-Purpose Flour
  • 1 cup (200g) Granulated Sugar
  • 1/2 cup (100g) Light Brown Sugar, packed
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup (113g) Unsalted Butter, melted and cooled
  • 2 large Eggs, room temperature
  • 1 cup (240ml) Buttermilk, room temperature
  • 1 tsp Vanilla Extract
  • 1 tbsp Lemon Zest
  • 1 cup (150g) Fresh or Frozen Mixed Berries (raspberries, chopped strawberries)
  • 1 tsp Beet Powder (optional, for deeper red color)
  • Powdered sugar, for dusting (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or two 8-inch round pans.
  • In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  • In a separate medium bowl, whisk together melted butter, eggs, buttermilk, vanilla extract, and lemon zest until well combined.
  • Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined, being careful not to overmix. A few streaks of flour are okay.
  • Gently fold in the mixed berries and optional beet powder until evenly distributed.
  • Pour the batter into the prepared pan(s) and spread evenly.
  • Bake for 30-35 minutes for round pans, or 35-40 minutes for a 9×13 pan, or until a wooden skewer inserted into the center comes out clean.
  • Let cool in the pan for 10-15 minutes before inverting onto a wire rack to cool completely.
  • Dust with powdered sugar before serving, if desired.
