Ingredients
- 2 cups (240g) All-Purpose Flour
- 1 cup (200g) Granulated Sugar
- 1/2 cup (100g) Light Brown Sugar, packed
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup (113g) Unsalted Butter, melted and cooled
- 2 large Eggs, room temperature
- 1 cup (240ml) Buttermilk, room temperature
- 1 tsp Vanilla Extract
- 1 tbsp Lemon Zest
- 1 cup (150g) Fresh or Frozen Mixed Berries (raspberries, chopped strawberries)
- 1 tsp Beet Powder (optional, for deeper red color)
- Powdered sugar, for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or two 8-inch round pans.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, whisk together melted butter, eggs, buttermilk, vanilla extract, and lemon zest until well combined.
- Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined, being careful not to overmix. A few streaks of flour are okay.
- Gently fold in the mixed berries and optional beet powder until evenly distributed.
- Pour the batter into the prepared pan(s) and spread evenly.
- Bake for 30-35 minutes for round pans, or 35-40 minutes for a 9×13 pan, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan for 10-15 minutes before inverting onto a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.
