Ingredients

  • 1 tbsp olive oil or sesame oil
  • 1 lb medium shrimp (26/30 count), peeled, deveined, and tails removed, patted dry
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2430 square or round dumpling wrappers
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch of nutmeg (optional)
  • 2 cups bechamel sauce OR marinara sauce (or a blend)
  • 2 cups shredded mozzarella cheese
  • 1/4 cup sliced green onions, for garnish (optional)
  • Red chili flakes (optional, for heat)

Instructions

  • Step 1: Prepare the Shrimp. Heat olive oil in a large skillet over medium-high heat. Add patted-dry shrimp and sauté for 1-2 minutes per side until pink and opaque. Remove and set aside.
  • Step 2: Craft the Sauce. In the same skillet, melt butter. Sauté minced garlic and grated ginger until fragrant (1 minute). Stir in your chosen sauce (bechamel or marinara) and simmer gently. Season with salt, pepper, and optional chili flakes.
  • Step 3: Prepare Ricotta Mixture. In a medium bowl, combine ricotta cheese, egg, 1/2 cup Parmesan, salt, pepper, and nutmeg (if using). Mix well.
  • Step 4: Assemble the Lasagna. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish. Spread a thin layer of sauce on the bottom. Arrange a single layer of dumpling wrappers, overlapping slightly. Spread half of the ricotta mixture over the wrappers. Top with half of the cooked shrimp and a third of the mozzarella. Drizzle with more sauce. Repeat layers: wrappers, remaining ricotta, remaining shrimp, another third of mozzarella, and more sauce. Finish with a final layer of wrappers, remaining sauce, and the rest of the mozzarella and a generous sprinkle of Parmesan.
  • Step 5: Bake to Perfection. Cover the baking dish loosely with foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes, or until golden brown and bubbly. For extra crispness, broil for 2-3 minutes at the end, watching carefully.
  • Step 6: Rest and Serve. Let the lasagna rest for 15-20 minutes before slicing and serving. Garnish with fresh green onions if desired.
