Ingredients
- 1 lb (450g) ground beef, 80/20 chuck
- 8–10 small flour tortillas
- 8–10 slices American or cheddar cheese
- 1/4 cup finely diced onion (optional, for cooking onto patties)
- 1/2 cup pickles or relish, for topping
- 1/2 cup special burger sauce (or mayo, ketchup, mustard combo), for topping
- Salt and freshly ground black pepper, to taste
- 1–2 tbsp high smoke point oil (canola, grapeseed, or avocado)
- Optional toppings: shredded lettuce, tomatoes, jalapeños, hot sauce
Instructions
- Prep Ingredients: Gather all your ingredients. Form the ground beef into 8-10 loose, golf-ball-sized meatballs (about 2 oz each). Finely dice your onion if using. Have cheese slices ready.
- Heat Pan: Place a heavy-bottomed skillet or griddle (cast iron works best) over high heat. Add 1 tablespoon of high smoke point oil and let it get screaming hot until shimmering.
- Smash & Cook: Place one meatball onto the hot pan. Immediately place a small flour tortilla on top of the meatball. Using a sturdy spatula or burger press, firmly press down on the tortilla and meatball, smashing it as thin as possible. Hold pressure for 10-15 seconds.
- Season & Flip: Sprinkle the exposed beef with salt, pepper, and a pinch of diced onion (if using). Cook for 1-2 minutes until the edges are crispy and the beef is deeply browned.
- Cheese & Finish: Carefully scrape under the patty and tortilla with your spatula and flip it over. Immediately place a slice of cheese on top of the hot beef. Cook for another 30-60 seconds, or until the cheese is melted and bubbly and the tortilla is lightly toasted.
- Assemble: Remove the cheesy smash burger tortilla from the pan. Add your desired sauce, pickles, and any other toppings. Fold and enjoy immediately. Repeat with remaining meatballs and tortillas, working in batches to avoid overcrowding the pan.
