Description

Create the best flavor Southwest Chicken Egg Rolls with our step-by-step easy to bake guide. Perfect for any meal or snack!

Ingredients

  • 8 oz cream cheese, softened
  • 2 cups cooked chicken, shredded
  • 2 tbsp Southwest seasoning
  • 1 cup canned corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (4 oz) diced green chiles, drained
  • 1/4 cup minced jalapeño (optional, for heat)
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • 1 package (18-20 count) egg roll wrappers
  • 2 tbsp olive oil or cooking spray

Instructions

  • 1. In a large bowl, combine softened cream cheese, shredded chicken, Southwest seasoning, corn, black beans, green chiles, minced jalapeño (if using), and shredded cheese. Mix well until all ingredients are evenly distributed.
  • 2. Set up an assembly line with your filling, a small bowl of water, and egg roll wrappers. Place 2-3 tablespoons of filling diagonally across the center of an egg roll wrapper.
  • 3. Fold the bottom corner of the wrapper over the filling, then fold in the side corners towards the center. Roll tightly from the bottom towards the top corner, moistening the top corner with water to seal completely.
  • 4. Preheat oven to 400°F (200°C). Place assembled egg rolls seam-side down on a lightly greased or parchment-lined baking sheet. Brush tops and sides with olive oil or spray with cooking spray.
  • 5. Bake for 18-22 minutes, flipping halfway through, until golden brown and crispy. Serve warm with your favorite dips.
