Ingredients
- 2 (20-ounce) cans young green jackfruit in brine or water, drained and rinsed
- 1 tbsp olive oil or avocado oil
- 1 tbsp paprika
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp maple syrup or agave nectar
- 1 tbsp apple cider vinegar
- 1/2 – 1 tsp cayenne pepper or red pepper flakes (optional, for extra heat)
- Fresh cilantro or scallions, chopped (for garnish, optional)
- Lime wedges (for serving, optional)
Instructions
- Prep the Jackfruit: Drain and thoroughly rinse canned jackfruit. Pat dry with paper towels. Shred jackfruit using your fingers or two forks, discarding tough core pieces.
- Mix the Magic: In a bowl, combine paprika, chili powder, cumin, garlic powder, onion powder. Add olive oil, maple syrup, apple cider vinegar, and optional cayenne/red pepper flakes. Whisk to form a paste.
