Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1/2-inch cubes
- 1 tbsp olive oil, plus more for cooking
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cayenne pepper (adjust to taste)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 ripe avocados, mashed
- 1 tbsp lime juice
- 4–6 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- Optional: sliced bell peppers, corn, black beans, sour cream, hot sauce
Instructions
- 1. Prepare Chicken: Pat chicken dry and cut into uniform 1/2-inch cubes.
- 2. Season Chicken: In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Toss chicken with 1 tbsp olive oil, then sprinkle with spice rub, ensuring even coating.
- 3. Cook Chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes, flipping occasionally, until golden brown and cooked through (165°F/74°C). Remove from heat.
- 4. Prepare Avocado: Mash avocados with lime juice in a small bowl.
- 5. Assemble Wraps: Warm tortillas. Spread mashed avocado on each tortilla, then layer with cooked chicken, shredded lettuce, diced tomatoes, and any other desired toppings. Fold in sides and roll up tightly. Serve immediately.
