Ingredients
- 1 cup (250g) creamy natural peanut butter
- 1/2 cup (60g) powdered sugar, sifted
- 1/4 teaspoon salt
- 2 tablespoons (10g) freeze-dried strawberry powder
- 1 1/2 cups (250g) chocolate chips (dark, milk, or white)
- 1 tablespoon coconut oil
Instructions
- Line a mini muffin tin with paper liners or use a silicone mold.
- In a bowl, combine peanut butter, powdered sugar, and salt. Mix until a thick dough forms. Divide in half.
- To one half, add strawberry powder and mix until uniformly pink.
- Roll small, equal-sized balls (about 1 tsp each) of both plain and strawberry peanut butter fillings.
- Refrigerate filling balls for 15-20 minutes to firm up.
- Melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
- Spoon 1 tsp melted chocolate into each mold. Place one plain peanut butter ball, then one strawberry ball on top, pressing gently.
- Cover with another 1-2 tsp melted chocolate, ensuring filling is covered. Tap tray to smooth.
- Chill for 30-60 minutes until chocolate is set. Enjoy!
