This refreshing salad combines crisp cucumbers, creamy fresh mozzarella, and a zesty herb dressing. It’s an easy-to-make side dish perfect for any occasion.
Ingredients
- 2 English cucumbers, sliced
- 8 oz fresh mozzarella (bocconcini or ciliegine), drained
- 1/4 red onion, finely diced
- 1/4 cup fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar (or lemon juice)
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, freshly ground, or to taste
- Optional: Pinch of sugar or honey
Instructions
- 1. Prepare Cucumbers: Wash and slice cucumbers into 1/4 to 1/2-inch half-moons or quarter-moons.
- 2. Prep Mozzarella: Drain fresh mozzarella. If using a large ball, tear or cube into bite-sized pieces.
- 3. Chop Aromatics: Finely dice the red onion. Roughly chop fresh dill and parsley.
- 4. Whisk Dressing: In a small bowl, whisk together extra virgin olive oil, red wine vinegar, salt, and black pepper until emulsified. Taste and adjust seasoning.
- 5. Combine & Toss: In a large bowl, gently combine cucumbers, mozzarella, red onion, and fresh herbs. Pour dressing over and toss gently until all ingredients are lightly coated.
- 6. Chill & Serve: For best flavor, chill for at least 30 minutes before serving.
