Ingredients
- 2 English or Persian cucumbers
- 1 tsp salt (for salting cucumbers)
- 2 cloves garlic, minced
- 2 tbsp soy sauce (or tamari for GF)
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1–2 tsp gochugaru (Korean chili flakes), to taste
- 1 tsp granulated sugar
- 1 tbsp toasted sesame seeds, for garnish
Instructions
- 1. Prep Cucumbers: Wash and slice cucumbers into 1/8-1/4 inch rounds. Place in a colander, sprinkle with 1 tsp salt, toss, and let sit for 15-20 minutes. Squeeze out excess water and pat dry.
- 2. Mince Garlic: While cucumbers salt, finely mince garlic cloves.
- 3. Whisk Dressing: In a medium bowl, combine minced garlic, soy sauce, rice vinegar, sesame oil, gochugaru, and sugar. Whisk until sugar dissolves.
- 4. Combine & Toss: Add dried cucumber slices to the dressing. Toss gently to ensure all slices are evenly coated.
- 5. Chill & Serve: Cover and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, sprinkle with toasted sesame seeds. Serve cold.
