Ingredients
- 1 cup unsalted butter
- 1 ½ cups packed light brown sugar
- 1 tsp pure vanilla extract
- ¼ tsp ground cinnamon (optional)
- ½ tsp baking soda
- 6 cups Rice Chex cereal
- 6 cups Corn Chex cereal
- 3 cups small pretzels
- 2 cups mixed nuts (pecans, peanuts, or walnuts work great)
Instructions
- Preheat oven to 250°F (120°C). Line two large baking sheets with parchment paper or silicone baking mats.
- In a very large heatproof bowl, combine Rice Chex, Corn Chex, pretzels, and nuts. Gently toss to mix.
- In a medium saucepan, combine butter, brown sugar, vanilla, and cinnamon (if using). Heat over medium, stirring constantly, until butter is melted and sugar is dissolved. Bring to a boil and let boil for 1 minute without stirring.
- Remove from heat and immediately stir in the baking soda. The mixture will lighten and become foamy.
- Pour the hot toffee mixture over the dry ingredients in the large bowl. Using a sturdy spatula, gently fold and stir until all ingredients are evenly coated.
- Divide the coated mix evenly between the two prepared baking sheets, spreading into a single layer.
- Bake for 1 hour, stirring every 15 minutes, until the mixture is golden and relatively dry.
- Remove from oven and let cool completely on the baking sheets. As it cools, the Toffee Chex Mix will harden and become crispy. Break into pieces and store in an airtight container once fully cooled.
